Maltitol is obtained from maltose and is a polyol alcohol. It is a white odourless powder that provides a fresh effect on rehydration in the mouth.
Properties
Maltitol compares closely with sucrose. It has the same molecular weight and almost as sweet. It is not digested in the upper GI tract but can ferment to a limited extent in the colon. It has a mild laxative effect.
The sweetening power is close to 0.9 (sugar = 1) and Maltitol has an energy content of 2.40 Kcal / g. Because of its non-reducing nature it does not participate in the Mailliard reaction. It is allegedly tooth friendly.

Applications
Simply replace half of sugar’s calories by using Maltitol. It is the most well tolerated of the polyols and can substitute for sugar in most everyday uses such as baking, confectionery (in chocolate, boiled sweets...).
Maltitol works in almost all applications of table sugar or other simple sugars (dextrose, fructose...), except in drinks. It is often present in “low sugar” or “no sugar added” products such as ice cream, cream desserts, cereal bars and is recommended to be suitable for diabetics (biscuits, chocolate, and ice cream).
It is often used to replace part of sucrose in a recipe at a weight for weight ratio with little influence on flavour or texture.
How to use
Despite its status as an additive, Maltitol is widely used. Used wisely, there is no better way to replace sugar and reduce calories without having to test the recipe. The cooling effect and low cariogenicity (promotion of tooth decay) are advantageous in confectionery.
Nevertheless, in products that rely on Mailliard browning for colour development, recipes must be adjusted to compensate for the lack of Mailliard reaction.
Food regulations
Maltitol is a permitted food additive in EU and is assigned number E965. When Maltitol exceeds 10% of the recipe’s total weight, it is obligatory to indicate a risk of a laxative effect. It is recommended that the daily consumption is restricted to 30-40g Maltitol a day and that the level of addition does not exceed 9% of weight of food prepared. Higher doses may be tolerated by some subjects and others may develop tolerance to higher levels with time. Use of this product is not recommended for babies and young infants. Store in a dry, cool place, away from direct sunlight in its original packaging.
