Xantana is obtained from the fermentation of corn starch with a bacteria found in cabbage. The result is a gum with great thickening power. It can also be used to suspend elements such as fruits in a liquid without sinking. Xantana is a very flexible product depending on its use. It is sold as a refined powder and is soluble in hot and cold bases, can thicken alcohol, retain gas and can even be frozen.
