A gluten-free, multi-functional, highly dispersible instant thickening starch of use in both hot and cold applications.

Ultratex is a must have product for any kitchen. Ultratex is an extremely versatile, high performance, thickening starch. It can be applied to both hot and cold liquid preparations until the desired thickness is reached. It is a tasteless, colourless and gluten free powder. When added to a liquid it disperses quickly and evenly without lumping.

Because Ultratex is tasteless, perfectly flavoured sauces, drinks, gels or any other liquid can be thickened to the ideal texture without compromising the flavour. Ultratex allows you to get the perfect consistency without compromising on flavour. Simply add 1-5% for instant thickening, hot or cold. If you are looking to create the perfect fluid gel or perfect stock. Ultratex is the quickest and easiest way to do it. Just add it to vegetable, fruit juice, milkshake, smoothies, stock, sorbet, cream, or any flavoured liquid. Ultratex is also freeze thaw stable and prevents the leeching of liquids.

  • Tasteless, Colourless and Gluten Free.
  • Thicken juices, sauces, stocks, drinks to the texture of your choice.
  • Create wafer thin tuiles by drying out gels made with Ultratex.
  • Make perfect fluid gels.
  • Prevent the leaching of liquids.

  • How to Use:
  • Add gradually until preferred consistency is achieved.
  • The hydration of Ultratex is rapid so it thickens very quickly. Ideally leave it for five minutes or so as the consistency will continue thickening slightly as the starch swells.
  • Typical Dosage Levels in Liquid Systems: 1-5%.

  • Food Additive Information:
This product is a food supplement or additive and is highly concentrated. Should be diluted and not directly consumed in its concentrated form.

    About Special Ingredients
Set up by food ingredients experts to focus on the growing demand from chefs for access to ingredients which until very recently had only been used by large food companies. From their factory in Derbyshire they now blend, prepare and produce a huge range of flavours and ingredients which you will now find in many of the top commercial kitchens around the world. In fact, if you saw the recent Bradley Cooper film 'Burnt', you will have noticed a lot of Special Ingredients products used in the kitchens!
Special Ingredients works closely with Westminster Kingsway College where they sponsor the Culinary Science & Kitchen Innovation Laboratory. Feedback from students using their products is used to develop new and exciting blends and innovative products.
    Director Dan Booth says:
I like nothing better than developing new products. Working with Dr Rachel Edwards-Stuart has given additional scientific support to innovate and create completely new ingredients that satisfy the increasingly technical demands of todays chefs.
